Italian Steak Pinwheels


"Uh yes please." Is all your guests are going to be saying when you pull this off the grill. 

This is pretty much all the favorite Italian stuff rolled up and seared to perfection. 

Take some flank steak and butterfly it. Then layer on salami or prosciutto or pepperoni, or all of them. Add a layer of provolone and fresh basil and sprinkle on some oregano. Maybe some dried tomatoes if you think you can get it in the wrap. Then roll the entire thing into a tight wrap. Take some skewers and skewer the wrap between where your cuts are going to be. I like around 1.5" to 2" cuts. They'll look like delicious meat pinwheels. 

Here comes the tricky part. Don't get frustrated, it'll still be good even if it gets screwed up a bit. You want a hot even bed of coals on half the grill. Give the fire some time to get the cooking grate hot. We want this to crisp up. This is where the 3/8" solid stainless cooking grate is going to shine. We need that energy transfer. Place the skewered pinwheels on the hot grate and sear just enough to get the sear. The tricky part is the cheese is going to start melting out. Don't panic. Once you get a nice sear repeat on the other side. Once the searing is complete, then move them to the cooler side of the grill to finish cooking until you reach the doneness you prefer. Remove the skewers and you did it! Congratulations!
